This is such a simple salad, but it is a celebration of how tasty tomatoes and cucumbers can be. They are cut into bite-sized pieces, then tossed with basil, olive oil and apple cider vinegar and seasoned with salt and pepper, and that’s honestly all that they need. Using colourful baby tomatoes gives a beautiful pop of colour. It makes for a perfect side salad for a lovely summer lunch.

This is a dish that embodies a labour of love. It takes a bit of time and energy to make it, but it is worth every ounce of energy once you take that first bite. It is so full of flavour, perfectly balanced between creamy and meaty, and makes for the perfect comfort meal. It’s a traditional Greek dish, and this is the closest I’ve managed to get it to the Moussaka we had when we visited Crete. It’s also one of those perfect dishes to make double of, then keep in the freezer for a day when you want some comfort food instantly.

Chicken thighs grilled on the BBQ are the best way to cook them (in my opinion). The skin gets all charred and crispy, the marinade keeps the meat succulent and juicy, and there is no way to beat the flame-grilled taste. These chicken thighs are marinated in a herby lemon yogurt sauce overnight, then grilled to perfection. A lovely dish for a summer dinner outside.
Marinated Tomato & Burrata Salad with a Cherry Dressing
This is such a fresh salad, perfect as a side dish for a steak, or as a meal of its own! The tomatoes are marinated with oil and herbs, the arugula is tossed in a cherry dressing, and the burrata is bursting with creamy stracciatella. The homemade cherry dressing brings a beautiful sweetness that pairs well with the creamy burrata.
Cheddar & Creamed Corn Bake
If you’ve never tried a corn bake before, you are in for a treat! This is cheesy, creamy on the inside, and slightly crispy on the outside. I love to make this cheddar & creamed corn bake as a side for a BBQ because it’s so easy to whip together, then leave it to bake while the meat is cooking outside.

This is such a refreshing drink to serve your guests on a summer day. I am very lucky to have some lemon trees growing in our complex, so we have more lemons than we know what to do with. So, of course, I had to make a lemon drink, and this virgin limoncello spritz is so perfect to make with fresh, homegrown lemons. You could even make it a cocktail by reducing the sparkling water and adding some prosecco, if you’re feeling naughty.
Marinated Minty Grilled Eggplant
