Lemon Yogurt Grilled Chicken
Chicken thighs grilled on the BBQ are the best way to cook them (in my opinion). The skin gets all charred and crispy, the marinade keeps the meat succulent and juicy, and there is no way to beat the flame-grilled taste. These chicken thighs are marinated in a herby lemon yogurt sauce overnight, then grilled to perfection. A lovely dish for a summer dinner outside.
Ingredients:
4 chicken thighs (bone-in, skin on)
1 cup plain yogurt
1 tsp dried oregano
Â― tsp dried thyme
1/2 tsp dried basil
1/2 tsp ground cumin
Â― tsp pepper
1 tsp salt
Zest and juice from 1 large lemon
4 cloves garlic, minced
2 tbsp olive oil
Method:
To make the yogurt marinade, in a large bowl, combine the yogurt, oregano, thyme, basil, cumin, pepper, salt, lemon zest & juice, garlic, and olive oil.
Pat the chicken dry with a paper towel and use a fork to stab the flesh (not the side with the skin) to allow the marinade to seep all the way through.
Place the chicken in the marinade and cover. Place in the fridge and leave to marinate for at least 3 hours, but ideally overnight.
Heat a grill to medium-high heat and grill them skin-side down, then flip. Brush any remaining marinade over the chicken as they are grilling. Cook until they are cooked through and beautifully charred on the outside.
Serve with tzatziki and a fresh Greek salad. Enjoy!
