Strawberry Yogurt Pancakes
These pancakes are pan-fried until golden, then topped with Greek yogurt, fresh strawberries, and drizzled with maple syrup. The yogurt makes them moist but still fluffy. It is the perfect treat for breakfast or brunch on the weekend alongside a hot cup of coffee.
Ingredients:
For the pancakes:
¾ cup flour
1 tbsp sugar
1 tsp baking powder
½ cup Greek yogurt
1 large egg
1 tbsp olive oil
1 tsp vanilla bean paste
½ cup milk
Butter to oil the pan
For serving:
2 tbsp Greek yogurt
½ cup strawberries
2 tbsp maple syrup
Method:
In a large bowl, add your flour, sugar, and baking powder, then stir to combine.
Add the Greek yogurt, egg, olive oil, vanilla, and milk, then whisk until smooth.
Heat a large pan to medium heat and use some butter to oil the pan. Spoon about 2 tbsp of the pancake batter per pancake onto the pan.
Fry the one side until it makes lots of little bubbles, then flip over and fry until golden brown and cooked through.
Wash and hull the strawberries, then cut them into quarters.
To serve, stack the pancakes up on a plate and top them with yogurt, the fresh strawberries, and drizzle over the maple syrup. Enjoy!
