Cheddar & Creamed Corn Bake

If you’ve never tried a corn bake before, you are in for a treat! This is cheesy, creamy on the inside, and slightly crispy on the outside. I love to make this cheddar & creamed corn bake as a side for a BBQ because it’s so easy to whip together, then leave it to bake while the meat is cooking outside.

Ingredients:

  • 418g can of creamed corn

  • 1 & ½ cups cheddar cheese (grated)

  • 1 egg

  • ½ tsp salt

  • ¼ tsp pepper

  • ½ tsp baking powder

  • 2/3 cup cornmeal

  • 1/3 cup cornstarch

  • ¼ cup olive oil


Method

  1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit) and line a square baking tin with baking paper.

  2. To a large bowl, add the creamed corn, cheddar, egg, salt, pepper, baking powder, cornmeal, cornstarch, and olive oil and mix until well combined.

  3. Pour the mixture into the lined baking tin and bake for 1 hour.

  4. Once baked, leave to cool for about 10 minutes before cutting it into slices. Enjoy!
