Roasted Garlic Tzatziki
This roasted garlic tzatziki is so delicious and pairs so well with almost any Greek or Mediterranean dish. Scoop it up with some fresh pita, spoon it on your plate as a dip for some chicken, or slather it in a wrap- it works so well with many dishes! It’s fresh, minty, creamy, and so easy to make.
Ingredients:
1 cup plain Greek yogurt
½ large cucumber
1 small head of garlic
2 tbsp extra virgin olive oil + more for drizzling
½ tsp pink Himalayan salt
¼ tsp pepper
1 tbsp chopped fresh dill (or ½ tsp dried dill)
1 tbsp chopped fresh mint
Method:
Preheat your oven to 200 degrees Celsius (390 degrees Fahrenheit).
Cut the garlic head in half horizontally across the cloves and place them on a piece of foil. Drizzle with some olive oil, salt, and pepper, then wrap them up and place them in the oven to roast for 20 minutes or until soft and cooked through.
Wash and grate the cucumber, then place in a cheesecloth and squeeze as much liquid out as you can (I like to squeeze it in a glass to drink later).
In a small bowl, add the yogurt, grated cucumber, olive oil, salt, pepper, dill, and mint, then mix well.
Remove the garlic from the oven and squeeze the garlic cloves out. Use a fork to mash them into a pulp, then add them to the yogurt and mix well.
Drizzle the top with more olive oil and garnish with fresh mint (or dill) and cracked black pepper. Serve with some pita or as a side for a Greek chicken dish. Enjoy!
