Miso Butter Charred Cabbage

I’m not even joking when I say that this is the best way to eat cabbage. The miso butter elevates this simple veg to a whole new level, and the char bits give it such a lovely smoky taste. It is a dish that people often tell me is their favourite part of the meal.

Ingredients:

  • 1 large green cabbage

  • 2 tbsp olive oil

  • 2 tbsp salted butter

  • 1 tbsp miso paste

  • 1 tsp soy sauce

  • 1 tbsp lemon juice

  • Salt to taste


Method:

  1. Heat a large stainless steel pan to high heat. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

  2. Cut the cabbage into quarters and then cut each quarter in half so that you have 8 equal-sized pieces.

  3. Drizzle the olive oil into the pan, then place the cabbage wedges, face down, into the pan. Allow the cabbage to lightly char on each side.

  4. Once charred on each side, place the pan into the oven to cook the cabbage through for about 20-30 minutes.

  5. Take the pan out of the oven and place it back on the stove, setting it to medium heat.

  6. Add the butter, miso paste, soy sauce, and lemon juice to a small bowl and stir to combine.

  7. Spoon the miso butter into the pan and coat the cabbage with it. Allow to fry for about 2 minutes on each side in the butter. Sprinkle with salt to taste.

  8. Serve warm and drizzle any leftover miso butter from the pan onto the cabbage when serving. Enjoy!
