You make the chili marinade, cook the beef until it falls apart, and then shred it up before placing it in a soft corn taco with some cheese and frying them up in a pan to get a slightly crunchy exterior. The result? The best damn tacos you’ve ever eaten.

This chunky pico de gallo is fresh, sweet, and makes the perfect side for your tacos. I love to serve a big helping of this next to my birria tacos or to scoop up with some nachos. It brightens any dish and is a great spring or summer side dish.

Whenever I see a special on berries, you know I’m buying them and likely getting way more than you can easily eat before they go funky. I end up making a berry crisp often to use up the berries that are past their prime firmness, but still perfectly tasty.
This is such an easy way to use up berries, and it can be made with frozen berries too. It comes out so bright, sweet, and chewy- a perfect dessert for spring or summer!

There’s nothing better than cutting open the perfect avocado. I get so excited when my avos are perfectly ripe and the flesh is buttery. Besides using my perfect avo for an avocado toast, my other favourite thing to do is make fresh guac. It’s so flavourful and makes the best snack with some nachos.

A refreshing matcha with bursts of strawberry. This is a favourite to grab at a cafe, but you won’t believe how easy it is to make at home. Using fresh strawberries instead of bottled syrups, this will be way better for you, and it tastes delicious!

Having hot cross buns during Easter time is a must for me. These are a gluten-free version and they came out so scrumptious! They are slightly crusty on the outside but soft on the inside. Studded with saltanas and giving off the most beautiful cinnamon aroma, these take me back to Easter time as a kid.

These are a showstopper but are actually really easy to make! I’ve made these the easiest version there is by using the pickle juice from a can of pickled beets. They make a great appetizer for Easter or a dinner party.

I have recently become obsessed with overnight oats. You prep them the night before, and bam, you have a delicious and nutritious breakfast waiting for you!
These are made with fresh strawberries that you turn into a compote and mix through the oats. The milk and yogurt make it super creamy, and the end result is a breakfast that tastes like a dessert.
Probiotic Pineapple Tepache
This is a Mexican fermented pineapple drink that is fresh, full of probiotics, and slightly fizzy. I especially love this drink because it uses the pineapple skins and center that usually go to waste, and it always makes me happy to use every part of a fruit.
Normally, it is made with piloncillo, which is an unrefined, caramel-like sugar, but I did not have any on hand, so I just used white sugar resulting in a more clear liquid in contrast to the dark liquid you would normally see in traditional tepache. It was very delicious and makes a perfect drink to go with your next Mexican dinner night.
Honey Caramelised Feta Carrots
These are sweet from the honey and salty from the feta. They are perfectly tender on the inside and lightly caramelised on the outside in the pan. They are the perfect side dish!
German Black Forest Cake
This is a moist chocolate cake, drenched in cherry syrup, filled with a rich dark chocolate ganache, piped with sweet cream, and finally topped with cherries. It is a winner as a birthday cake or as a delicious summer treat.
Asian Style Fried Pork Chop
These come out crispy on the outside and super flavourful on the inside. It is juicy and has a great blend of asian flavours, making this a perfect weeknight dinner treat. You can leave the pork to marinate for an hour, but overnight is even better. Pair it with something fresh to cut through the fat, and you have yourself a perfect meal.
Blood Orange Carpaccio with a Cool Honey Drizzle
This is sweet, fresh, and tangy. The blood oranges have a crimson colour and raspberry-like flavour, which is already a show-stopper, but paired with the cold honey (which is infused with lemongrass, mint, ginger and lime), it is elevated to a whole new level. This is the perfect starter or side dish for a spring or summer dinner party.

This is my new favourite drink this Spring. It is refreshing, deeply hydrating, and the perfect cooler while you sit by the pool.
It’s a mocktail, but can easily be turned into a cocktail by adding a splash of rum or vodka if you’re feeling naughty.
