Marinated Tomato & Burrata Salad with a Cherry Dressing

This is such a fresh salad, perfect as a side dish for a steak, or as a meal of its own! The tomatoes are marinated with oil and herbs, the arugula is tossed in a cherry dressing, and the burrata is bursting with creamy stracciatella. The homemade cherry dressing brings a beautiful sweetness that pairs well with the creamy burrata.

Ingredients:

For the marinated tomatoes:

  • 3 large, colourful heirloom tomatoes

  • ¼ cup olive oil

  • 1 tbsp apple cider vinegar

  • ½ tsp dried basil

  • ½ tsp dried parsley

  • ½ tsp dried oregano

  • ½ tsp salt

  • ¼ tsp pepper

For the dressing:

  • ¼ cup tart cherry juice

  • 1 tsp maple syrup

  • 2 tbsp apple cider vinegar

  • ¼ cup olive oil

  • ½ tsp salt

  • ¼ tsp pepper

For the salad:

  • 150g arugula

  • ½ cup grilled green olives

  • 1 large burrata

Method:

  1. Wash and cut your tomatoes into large chunks. Place them in a jar along with the rest of the marinade ingredients, then close the lid and gently shake to cover evenly. Leave them to marinate for at least an hour.

  2. To make the dressing, add the cherry juice, maple syrup, apple cider vinegar, olive oil, salt, and pepper to a jar and shake until emulsified.

  3. Place the arugula on a serving dish and toss it with the cherry dressing. Top the arugula with the marinated tomatoes and grilled green olives.

  4. Lastly, place the burrata on top and slice it down the middle to release the stracciatella. Drizzle with olive oil and grind some black pepper over. Enjoy!
