Tomato, Cucumber, & Basil Salad

This is such a simple salad, but it is a celebration of how tasty tomatoes and cucumbers can be. They are cut into bite-sized pieces, then tossed with basil, olive oil and apple cider vinegar and seasoned with salt and pepper, and that’s honestly all that they need. Using colourful baby tomatoes gives a beautiful pop of colour. It makes for a perfect side salad for a lovely summer lunch.

Ingredients:

  • 450 g colourful cherry tomatoes

  • 1 large cucumber

  • small handful of basil (about 6 large leaves)

  • 2 tbsp extra virgin olive oil

  • 1 tbsp apple cider vinegar

  • Salt and pepper to season


Method:

  1. Wash the tomatoes, cucumber, and basil.

  2. Cut the cherry tomatoes in half and add them to a large salad bowl.

  3. Cut the cucumber into bite-sized pieces and add them to the bowl.

  4. Cut the basil into strands and add it to the bowl.

  5. Drizzle over with olive oil and apple cider vinegar, then season to taste with salt and pepper.

  6. Toss until well coated. Enjoy!
