Heirloom Tomato Carpaccio

I love using heirloom tomatoes for this because they are so beautiful and colourful, but you can use any tomatoes that you have on hand. It’s a simple appetizer or side dish, but it’s so fresh and vibrant that any tomato-lover will be happy to have this served.

Ingredients:

  • 3 large, colourful heirloom tomatoes

  • 1 handful of basil leaves

  • ¼ cup extra virgin olive oil

  • Salt and pepper to taste


Method:

  1. Using a very sharp knife, cut the tomatoes into thin slices.

  2. Arrange them on a serving plate so that they partially overlap.

  3. Season with salt and pepper to taste, then drizzle with olive oil.

  4. Scatter the basil leaves over the tomatoes and garnish with basil flowers if you have. Enjoy!
