Caramelised Banana Pancakes
These taste just like banana bread, but for breakfast. The pancakes are made with Greek yogurt, which makes them moist but still fluffy. The bananas are caramelised using their own sugars, fried in butter, then served with the hot pancakes, runny almond butter, and maple syrup.
Ingredients:
¾ cup flour
1 tbsp sugar
1 tsp baking powder
½ tsp ground cinnamon
½ cup Greek yogurt
1 large egg
1 tbsp olive oil
1 tsp vanilla bean paste
½ cup milk
1 tbsp butter
1 large banana
2 tbsp almond butter
2 tbsp maple syrup
Method:
In a large bowl, add your flour, sugar, baking powder, and ground cinnamon, then stir to combine.
Add the Greek yogurt, egg, olive oil, vanilla, and milk, then whisk until smooth.
Heat a large pan to medium heat and use some butter to oil the pan. Spoon about 2 tbsp of the pancake batter per pancake onto the pan.
Fry the one side until it makes lots of little bubbles, then flip over and fry until golden brown and cooked through.
Once you are done cooking your pancakes, place 1 tbsp of butter into the pan and allow it to melt.
Cut your banana into slices and place them in the pan to fry in the butter. Once caramelised on one side, flip them over to caramelise on the other side.
To serve, place some pancakes on a plate and top with the caramelised banana, then drizzle over the almond butter and maple syrup. Enjoy!
