Virgin Limoncello Spritz
This is such a refreshing drink to serve your guests on a summer day. I am very lucky to have some lemon trees growing in our complex, so we have more lemons than we know what to do with. So, of course, I had to make a lemon drink, and this virgin limoncello spritz is so perfect to make with fresh, homegrown lemons. You could even make it a cocktail by reducing the sparkling water and adding some prosecco, if you’re feeling naughty.
Ingredients:
5-6 lemons
½ cup sugar
To serve:
Sparkling water
Ice
Mint
Lemon slices
Method
Wash your lemons, then peel all of the zest from your lemons. It’s best to use a peeler for this instead of a knife so that you don’t get too much pith (the bitter white part).
Add the lemon zest to a jar and then pour in the sugar. Muddle the peels to get some of the oils out.
Cut the lemons in half, then squeeze all of the juice into the jar with the peels.
If you have the time for it, leave the sugary lemon mixture overnight to macerate. If you are short on time, you can add the mixture to a small pot and bring it to a gentle simmer until the sugar is dissolved.
Strain the liquid, then add about ¼ cup to a glass. Add ice, some lemon slices, mint, and then top up with sparkling water. Enjoy!
