Who doesn’t love a freshly baked banana bread? I will find any excuse to make banana bread and often purposefully leave my bananas to go black so that I have a valid excuse to bake some. This is the first gluten-free version that has actually come out moist and doesn’t sink after taking it out of the oven.

So I’ve tweaked the recipe to be a bit healthier for us and to help our bodies not have such a massive blood sugar spike and crash. This is something that I loved to eat growing up. These are crispy on the outside, baked until golden, and filled with a perfectly spiced beef filling. They are a great snack, and are baked instead of fried, so they are healthier for you. Pair them with a peach or mango chutney, or a mint yoghurt dipping sauce.

This is one of those things that you can throw together quickly if you need an appetiser or side for your meal, and it comes out perfect every time. You won’t believe how much flavour is in these! It’s one of my favourite ways to use fresh tomatoes and basil, and it’s always a crowd-pleaser.

Seeing all of the fresh berries in season got me so excited to make a fresh berry jam. I like my jam more spreadable and with less sugar than most, because the berries are already so sweet and flavourful. This is so easy to make and is great to spread on toast, add on top of a scone, or spoon in between cake layers.

This is seriously the best Thai cashew chicken I’ve ever had. This dish has been a firm favourite when ordering takeout for a long time, and now I can finally say that “we have cashew chicken at home” because this is better than takeout. It’s saucy, nutty, and full of fresh, crunchy veg and tender chicken strips. Next time you are thinking about ordering in, try making this instead.
Kale Saag Paneer
Paneer is an Indian cheese that is fairly hard and doesn’t melt. It is so delicious, especially in a saag paneer dish. This is my version of it, where I also used some kale to bulk up on the greens. It gives a massive boost of dark leafy greens to your diet in one dish.
Raspberry Chewy Mochi Donuts
Crispy and golden on the outside, and chewy on the inside. If you have never tried mochi donuts before, you are in for a treat. They are made with rice flour, which gives them their chewy texture, and this also means that they are gluten-free. You can dip them in whatever flavour glaze you like, but I chose a raspberry glaze for these.
Roasted Beetroot Garlic Hummus
I love a vibrantly coloured dip, and this one is so beautiful and tastes divine! The beets and garlic are roasted, which caramelises their natural sugars, adding a new depth of flavour to this dip. It is creamy, a bright pink, and perfect for dipping carrot and celery sticks into for a light snack.
Cardamom Pomegranate Fizz
This cardamom pomegranate fizz is sweet, fruity, and slightly spicy. It has a beautiful aroma from the cardamom and is the perfect drink to keep you cool on a hot day. Using fresh-squeezed, or juice not from concentrate, is best for this to get the antioxidant health benefits of the pomegranate.
Mango Jasmine Green Tea
If you love jasmine green tea, this is a drink you need to try. It is naturally sweetened with mango and maple syrup, with the puree at the bottom of the glass, so you get bursts of mango when drinking it through a straw. Jasmine is a beautiful, delicate fragrance that elevates this drink to feel so fancy.
Tomato, Cucumber, & Basil Salad
This is such a simple salad, but it is a celebration of how tasty tomatoes and cucumbers can be. They are cut into bite-sized pieces, then tossed with basil, olive oil and apple cider vinegar and seasoned with salt and pepper, and that’s honestly all that they need. Using colourful baby tomatoes gives a beautiful pop of colour. It makes for a perfect side salad for a lovely summer lunch.
Steamed Ricepaper Prawn Dumplings
These dumplings are so delicious and such a lovely starter or side dish. They are steamed and made with ricepaper, so they are a healthier alternative to other dumplings. If you are intimidated by making dumplings, don’t be! Give it a try and see how easy it is to make these prawn dumplings at home.
Sticky Miso Maple Roasted Beetroot
These are sticky, sweet, and full of umami flavour from the miso maple sauce. The beetroot is roasted until tender, which caramelises its natural sugars, then it is tossed in the miso maple sauce, making it sticky and even more delicious. If you don’t love beets, give this recipe a try, and I can almost guarantee that you will love them.
Coconut Cherry Electrolyte Drink
This is so refreshing and perfect to sip on throughout the day on a hot summer’s day, or after a workout. It is a lovely cherry and coconut flavoured Nature’s Gatorade drink to replenish your electrolytes, rehydrate you, and replace minerals lost through sweat. It’s made with all-natural ingredients and is way better than the powder versions that you would buy from the store.
Roasted Garlic Tzatziki
This roasted garlic tzatziki is so delicious and pairs so well with almost any Greek or Mediterranean dish. Scoop it up with some fresh pita, spoon it on your plate as a dip for some chicken, or slather it in a wrap- it works so well with many dishes! It’s fresh, minty, creamy, and so easy to make.
Greek Moussaka
This is a dish that embodies a labour of love. It takes a bit of time and energy to make it, but it is worth every ounce of energy once you take that first bite. It is so full of flavour, perfectly balanced between creamy and meaty, and makes for the perfect comfort meal. It’s a traditional Greek dish, and this is the closest I’ve managed to get it to the Moussaka we had when we visited Crete. It’s also one of those perfect dishes to make double of, then keep in the freezer for a day when you want some comfort food instantly.
Lemon Yogurt Grilled Chicken
Chicken thighs grilled on the BBQ are the best way to cook them (in my opinion). The skin gets all charred and crispy, the marinade keeps the meat succulent and juicy, and there is no way to beat the flame-grilled taste. These chicken thighs are marinated in a herby lemon yogurt sauce overnight, then grilled to perfection. A lovely dish for a summer dinner outside.
Marinated Tomato & Burrata Salad with a Cherry Dressing
This is such a fresh salad, perfect as a side dish for a steak, or as a meal of its own! The tomatoes are marinated with oil and herbs, the arugula is tossed in a cherry dressing, and the burrata is bursting with creamy stracciatella. The homemade cherry dressing brings a beautiful sweetness that pairs well with the creamy burrata.
