Gluten-Free Hot Cross Buns
Having hot cross buns during Easter time is a must for me. These are a gluten-free version and they came out so scrumptious! They are slightly crusty on the outside but soft on the inside. Studded with saltanas and giving off the most beautiful cinnamon aroma, these take me back to Easter time as a kid.
The Best Roast Potatoes
These are crunchy and golden on the outside, but soft and fluffy on the inside. It is minimal in ingredients, but it’s the method that makes the big difference in getting that perfect roast potato. Pair it with a roast chicken and a fresh salad, and you have yourself the perfect Sunday roast.
Easy Purple Pickled Deviled Eggs
These are a showstopper but are actually really easy to make! I’ve made these the easiest version there is by using the pickle juice from a can of pickled beets. They make a great appetizer for Easter or a dinner party.
Strawberries and Cream Overnight Oats
I have recently become obsessed with overnight oats. You prep them the night before, and bam, you have a delicious and nutritious breakfast waiting for you!
These are made with fresh strawberries that you turn into a compote and mix through the oats. The milk and yogurt make it super creamy, and the end result is a breakfast that tastes like a dessert.
Probiotic Pineapple Tepache
This is a Mexican fermented pineapple drink that is fresh, full of probiotics, and slightly fizzy. I especially love this drink because it uses the pineapple skins and center that usually go to waste, and it always makes me happy to use every part of a fruit.
Normally, it is made with piloncillo, which is an unrefined, caramel-like sugar, but I did not have any on hand, so I just used white sugar resulting in a more clear liquid in contrast to the dark liquid you would normally see in traditional tepache. It was very delicious and makes a perfect drink to go with your next Mexican dinner night.
Honey Caramelised Feta Carrots
These are sweet from the honey and salty from the feta. They are perfectly tender on the inside and lightly caramelised on the outside in the pan. They are the perfect side dish!
German Black Forest Cake
This is a moist chocolate cake, drenched in cherry syrup, filled with a rich dark chocolate ganache, piped with sweet cream, and finally topped with cherries. It is a winner as a birthday cake or as a delicious summer treat.
Asian Style Fried Pork Chop
These come out crispy on the outside and super flavourful on the inside. It is juicy and has a great blend of asian flavours, making this a perfect weeknight dinner treat. You can leave the pork to marinate for an hour, but overnight is even better. Pair it with something fresh to cut through the fat, and you have yourself a perfect meal.
Blood Orange Carpaccio with a Cold Honey Drizzle
This is sweet, fresh, and tangy. The blood oranges have a crimson colour and raspberry-like flavour, which is already a show-stopper, but paired with the cold honey (which is infused with lemongrass, mint, ginger and lime), it is elevated to a whole new level. This is the perfect starter or side dish for a spring or summer dinner party.
Cucumber Basil Coconut Cooler
This is my new favourite drink this Spring. It is refreshing, deeply hydrating, and the perfect cooler while you sit by the pool.
It’s a mocktail, but can easily be turned into a cocktail by adding a splash of rum or vodka if you’re feeling naughty.
Chicken Mayo Tostadas with a Pineapple Tomato Salsa
These tostadas are crunchy from the base, creamy from the homemade mayonnaise, and fresh from the pineapple tomato salsa. It’s simple to make and is a great way to use leftover rotisserie chicken.
Cool Honey
While the world is obsessed with hot honey, I’m obsessed with cool honey. It is zesty, fresh, citrusy, and tangy. Drizzle it over chicken, potatoes, salads, or use it as a sweetener for your cocktails- the possibilities are endless! It is nothing less than pure perfection.
Homemade Mayonnaise
Making mayo from scratch is so much easier than you think and tastes way better than the mayonnaise on the shop shelves. If you want a mayo that is thick, tangy, and rich, then this is the recipe for you.
Fresh Apple Kale Salad
This salad is so refreshing and light. The fruit gives a perfect hit of sweetness, while the apple cider vinegar and mustard dressing bring an acidity that makes this so vibrant. It is the perfect salad for a main or as a side dish for a hot day.
Better Than Takeout Hoisin Ginger Crispy Beef
This fakeaway Asian crispy beef is sooo good! I honestly find making takeout food at home so much better because it’s way cheaper and I know exactly what is going into my food (you’d be surprised how much oil and sugar are normally in takeout meals). This recipe is easy to make and is such a crowd-pleaser.
Lemon Posset
These are zesty, refreshing, and a really cute way to serve a dessert using the whole fruit. If you love lemons, this is a must-try, and it’s a great way to use up lots of lemons!
Thai Red Curry Coconut Chicken Breasts
These chicken breasts are tender and bursting with flavour. The Thai red curry paste gives an aromatic, vibrant kick, while the coconut cream tones down the spice and keeps the chicken succulent and tender. Cooking the chicken breasts in the oven allows them to cook through without getting burnt and rubbery on the outside.
Almond Milk
Stop buying almond milk from the store and make your own instead. Have you ever read the label on store-bought almond milk? The ingredient list likely contains way more than just water and almonds (hello emulsifiers, sweeteners, oils, binding agents, flavourants, etc.). So if you think you’re picking a healthy milk alternative, you are sadly mistaken.
Ultimate Summer Zucchini
These are scored, pan-fried until golden, and then set in the oven to cook through. These come out so tender and so flavourful with just a few simple ingredients. A must-try for a summer side dish.
Almond Vanilla Croissants
Buttery, flaky croissants filled with a gooey almond vanilla center. These are so simple to make and are a great way to use stale croissants. Once they bake, they will be even more delicious than when they were fresh, plain croissants.
