Honey Caramelised Feta Carrots

These are sweet from the honey and salty from the feta. They are perfectly tender on the inside and lightly caramelised on the outside in the pan. They are the perfect side dish!


Ingredients:

  • 500g baby carrots

  • 2 tbsp butter

  • ½ tsp salt

  • ¼ tsp dried thyme

  • 2 tbsp honey

  • ½ cup crumbled feta


Method:

  1. Place the carrots in a pan and add a splash of water. Cover with a lid and bring to a simmer, allowing the carrots to steam until all the water has evaporated.

  2. Add the butter to the pan and fry until the carrots have some light colouring on them.

  3. Add the salt, thyme, and honey, and caramelise the carrots for about 5 minutes.

  4. Sprinkle the crumbled feta over the carrots, and they are ready to serve. Enjoy!
