Asian Style Fried Pork Chop

These come out crispy on the outside and super flavourful on the inside. It is juicy and has a great blend of asian flavours, making this a perfect weeknight dinner treat. You can leave the pork to marinate for an hour, but overnight is even better. Pair it with something fresh to cut through the fat, and you have yourself a perfect meal.


Ingredients

  • 4 pork chops

  • 1 tsp lemongrass paste

  • 2 garlic cloves (minced)

  • 1 tsp fresh ginger (minced)

  • 2 tbsp soy sauce

  • 1 tsp mirin

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1 egg

  • Cornstarch for coating

  • Canola or sunflower oil for frying


Method

  1. Cut about 3 slits against the fat on the pork chops so that the meat does not curl when frying as the fat shrinks.

  2. Using the back of your large knife, smack along both sides of the pork chop to make it a bit thinner and allow ridges for flavour to seep in.

  3. Place the chops in a shallow dish and add the lemongrass, garlic, ginger, soy sauce, mirin, salt and pepper. Massage the seasonings into the meat and allow it to marinate for an hour.

  4. After an hour, add the egg and 1 tablespoon of cornstarch to the chops, then massage the chops until they are well coated in the egg mixture.

  5. Dip each side of the chops in cornstarch, then fry them for about 5 minutes on each side on medium-high heat, or until golden brown and cooked through.

  6. Serve while crispy along with a salad, such as an asian cucumber pepper salad and pickled carrots. Enjoy!
