Cucumber Basil Coconut Cooler
This is my new favourite drink this Spring. It is refreshing, deeply hydrating, and the perfect cooler while you sit by the pool.
It’s a mocktail, but can easily be turned into a cocktail by adding a splash of rum or vodka if you’re feeling naughty.
Ingredients
Serves 2-3 glasses
1 large cucumber
1/4 fresh lime (without rind)
3 leaves of basil
3 leaves of mint
Pinch of pink Himalayan salt
1 tbsp extra virgin olive oil
3 cups coconut water
1 tbs maple syrup
sparkling water (optional)
Method
Peel some long shavings of cucumber with a peeler for garnish (one per glass) and set aside for later.
Cut the cucumber into smaller pieces and add it to the blender. Add the lime, basil, mint, salt, olive oil, coconut water, and maple syrup to the blender, then blend for about 2 minutes.
Strain the liquid through a strainer or cheesecloth into a jug. You can either top up the cucumber juice with sparkling water, or leave it as is (I prefer it left as is).
Add some ice to a glass, then pour in the cucumber juice. Fold the cucumber over the top of the drink as a garnish. Enjoy!
