Fresh Apple Kale Salad

This salad is so refreshing and light. The fruit gives a perfect hit of sweetness, while the apple cider vinegar and mustard dressing bring an acidity that makes this so vibrant. It is the perfect salad for a main or as a side dish for a hot day.


Ingredients:

  • 150g chopped kale

  • ¼ cup olive oil

  • 1 tomato

  • 1 pink lady apple

  • ½ cup pomegranate gems

  • 1/3 cup shaved asiago cheese

  • ½ tsp salt

  • ¼ tsp pepper

  • 1 tsp dijon mustard

  • 1 tbsp apple cider vinegar


Method:

  1. In a large bowl, add the kale and the olive oil, then use your hands to massage the oil into the kale. Trust me, do not skip this step, it makes a world of difference when the kale is ‘wilted’ from the massage.

  2. Cut the tomato into cubes, and slice the apple, then add them to the kale along with the pomegranate.

  3. Add the remaining ingredients and toss well so that the dressing is evenly distributed. Enjoy!
