Chicken Mayo Tostadas with a Pineapple Tomato Salsa
These tostadas are crunchy from the base, creamy from the homemade mayonnaise, and fresh from the pineapple tomato salsa. It’s simple to make and is a great way to use leftover rotisserie chicken.
Ingredients:
Tostadas (2-3 per person)
2 cooked chicken breasts
1 cup homemade mayonnaise
4 small colourful peppers
1 tomato
¼ of a fresh pineapple
Small handful of basil
Juice from 1 lemon
1 tbsp apple cider vinegar
½ tsp salt
¼ tsp pepper
Method:
Cut the chicken breasts into cubes, then add the chicken and mayonnaise and stir until well combined. Season to taste with salt and pepper.
Chop the peppers, tomato, and pineapple into little cubes. Cut the basil into thin strips.
In a separate bowl from the chicken, add the chopped veg and fruit, and add the lemon juice, apple cider vinegar, salt, and pepper, then stir well.
Lay 2-3 tostadas per person on a plate and pile on the chicken mayo, then spoon on the tomato pineapple salsa. Enjoy!
