Strawberries and Cream Overnight Oats
I have recently become obsessed with overnight oats. You prep them the night before, and bam, you have a delicious and nutritious breakfast waiting for you!
These are made with fresh strawberries that you turn into a compote and mix through the oats. The milk and yogurt make it super creamy, and the end result is a breakfast that tastes like a dessert.
Ingredients:
1 cup fresh strawberries
2 tbsp maple syrup
1 cup rolled oats
1 tbsp chia seeds
1 cup milk
½ cup Greek yogurt
1 tsp vanilla extract
pinch of salt
Method:
Wash and hull your strawberries, then cut them into quarters. Add the strawberries and maple syrup to a small pot and set to medium heat.
Cook them down until they are jammy and have created a nice strawberry liquid.
You can either blend them into a nice, smooth paste or leave them chunky, depending on your preferences.
Next, in a large jar, add the oats, chia seeds, milk, Greek yogurt, vanilla extract, and pinch of salt. Stir to mix well.
Pour the strawberry compote into the oats and stir until it is fully mixed in.
Set in the refrigerator and leave overnight to let the oats swell. Enjoy!
