Ultimate Summer Zucchini

These are scored, pan-fried until golden, and then set in the oven to cook through. These come out so tender and so flavourful with just a few simple ingredients. A must-try for a summer side dish.


Ingredients:

  • 3 medium-sized zucchinis

  • 2 tbsp olive oil

  • 1 tbsp butter

  • ½ tsp salt

  • ¼ tsp pepper

  • ½ tsp dried oregano


Method:

  1. Wash the zucchinis, then slice them in half lengthways.

  2. Score the insides by cutting lines diagonally about 1 cm apart one way, then cutting lines diagonally 1 cm apart in the opposite direction, creating diamond shapes.

  3. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

  4. Bring an oven-safe pan to high heat and coat it with the olive oil. Place the zucchinis face down in the pan and sear for about 2 minutes, then turn them around and sear for another 2 minutes.

  5. Add the butter to the pan and allow it to melt. Sprinkle with salt, pepper, and oregano, then turn the zucchini face down again to soak up the butter.

  6. Place the pan with the zucchini in the oven and bake for 10 minutes until cooked through and tender.

  7. Serve with steak or chicken, and drizzle any butter leftover from the pan over the zucchini. Enjoy!
