Cool Honey
While the world is obsessed with hot honey, I’m obsessed with cool honey. It is zesty, fresh, citrusy, and tangy. Drizzle it over chicken, potatoes, salads, or use it as a sweetener for your cocktails- the possibilities are endless! It is nothing less than pure perfection.
Ingredients:
½ cup organic wildflower honey
¼ tsp grated ginger
½ tsp lemongrass paste
Small handful of mint (about 20 leaves)
Juice from half a lime
¼ tsp pink Himalayan salt
¼ tsp pepper
2 long peels of blood orange rind (thinly sliced)
Method:
In a bowl, add all of the ingredients and stir until well combined. Store it in the fridge in a tightly sealed jar until ready to use.
Add it to just about anything- drizzle it over fruit, veg, potatoes, chicken, or use it to sweeten your cocktails. Enjoy!
