Almond Milk
Stop buying almond milk from the store and make your own instead. Have you ever read the label on store-bought almond milk? The ingredient list likely contains way more than just water and almonds (hello emulsifiers, sweeteners, oils, binding agents, flavourants, etc.). So if you think you’re picking a healthy milk alternative, you are sadly mistaken.
Making your own almond milk at home will ensure that you are actually drinking almond milk and will save you tons of money in the end. You will also get almond flour as a by-product, so it’s a win-win!
Ingredients:
1.5 cups unroasted unsalted almonds
6 cups water
pinch of Himalayan pink salt
1/2 tsp vanilla bean paste
1 tbsp maple syrup
Method:
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
Place the almonds on a large baking tray and roast for 15 minutes, tossing halfway to ensure an even roast.
Place the hot almonds into a bowl of cold water and leave to soak for at least 10 minutes. The longer you leave them, the easier it will be to peel, but it should already come off fairly easily after a 10-minute soak.
Use your fingers to peel away the brown skins. The skins make the milk more bitter and earthy, so it’s best to remove them for a richer, smoother-tasting milk. Alternatively, you could also use blanched almonds if you have them.
Once the almonds are peeled, place them in a bowl of water and allow them to soak for 1 hour.
Once soaked, rinse them, then add the almonds to a blender with 6 cups of water. Blitz them for about 4-5 minutes until the almonds are a pulp and the water is white.
Pour the liquid through a nut milk bag or a cheese cloth into a jar and squeeze all of the liquid out until you are left with just the dry almond pulp. Save the almond pulp to make almond flour.
Add the salt, vanilla, and maple syrup and stir well. Adjust sweetness as desired.
Store the jar tightly closed in the fridge. The liquid will separate- this does not mean that it has gone bad! It’s just a sign that there is no crap in your nut milk. You will just need to give it a shake before pouring, and you are good to go. Enjoy!
