Blood Orange Carpaccio with a Cold Honey Drizzle

This is sweet, fresh, and tangy. The blood oranges have a crimson colour and raspberry-like flavour, which is already a show-stopper, but paired with the cold honey (which is infused with lemongrass, mint, ginger and lime), it is elevated to a whole new level. This is the perfect starter or side dish for a spring or summer dinner party.

Method:

  1. Thinly slice the blood oranges using a sharp knife into about 1cm (0.5 inch) discs.

  2. Lay the discs on a plate, slightly layering them and moving from the outside towards the center in a circle.

  3. Drizzle a generous amount of cold honey over the blood oranges. Enjoy!
