Almond Vanilla Croissants
Buttery, flaky croissants filled with a gooey almond vanilla center. These are so simple to make and are a great way to use stale croissants. Once they bake, they will be even more delicious than when they were fresh, plain croissants.
Ingredients:
For the croissants:
6-8 croissants (stale or fresh is perfect for this recipe)
1/2 cup water
1/3 cup sugar
1 tsp vanilla essence
For the filling:
3 tbsp salted butter (soft)
1 cup almond flour
1/4 cup sugar
1 egg
1 teaspoon vanilla bean paste
1/2 teaspoon salt
1/2 cup sliced almonds
Method:
Preheat the oven to 180 degrees Celsius (356 Fahrenheit) and line a baking tray with baking paper.
In a small pot, add the water, 1/3 cup sugar, and vanilla essence and heat until the sugar has completely dissolved.
Cut the croissants in half lengthways and brush the simple syrup generously on the insides of the croissant halves.
In a bowl, add the butter, almond flour, sugar, egg, vanilla bean paste, and salt and stir until well combined and there are no lumps.
Keep ¼ of the almond filling aside for the top of the croissants. Divide the rest of the filling between the bottom halves of the croissants (about 1 tablespoon each) and spread evenly.
Place the top half of the croissants on top of their matching bottom half, making them whole again.
Divide the remaining almond filling on top of the croissant tops (about 1 teaspoon each) and spread along the middle evenly.
Sprinkle the almond slices ontop of the almond filling and use your fingers to gently press them down to ensure they stick.
Bake for 15 minutes until golden brown. Allow to cool for 5 minutes before serving. Enjoy!
