Blackberry, Raspberry & Thyme Jam
Seeing all of the fresh berries in season got me so excited to make a fresh berry jam. I like my jam more spreadable and with less sugar than most, because the berries are already so sweet and flavourful. This is so easy to make and is great to spread on toast, add on top of a scone, or spoon in between cake layers.
Ingredients:
1 cup blackberries (frozen or fresh)
Â― cup raspberries (frozen or fresh)
pinch of dried thyme
Â― cup sugar
1 tbsp lemon juice
Method:
In a small pan, add the blackberries, raspberries, thyme, sugar, and lemon juice.
Bring to a gentle simmer and allow to cook for 10 minutes. The berries will release their juices and slowly become jammy.
Once the berries are soft, use a fork to mash them up until there are no big chunks left.
Allow the jam to cool, then transfer to a small, sterilised jar and store it in the fridge. Enjoy!
