Healthier Rice Crispy Bars
This childhood nostalgia snack is so yummy, but it’s definitely not healthy. So I’ve tweaked the recipe to be a bit healthier for us and to help our bodies not have such a massive blood sugar spike and crash. I think it’s even more delicious than the original, but you give it a try and let me know what you think.
Ingredients:
1/2 cup butter
280g marshmallows
1 tsp vanilla paste
1/4 cup salted creamy almond butter
1/4 cup vanilla collagen powder (I use the Vital Proteins one)
255 g Rice Krispies
Method:
Add the butter and marshmallows to a large pot and heat on low. Stir the butter and marshmallows until they melt and are combined and smooth.
Switch off the heat, then add the vanilla paste, almond butter, and collagen powder and stir well.
Fold in the Rice Krispies until the marshmallow mixture is evenly distributed.
Pour the mixture into a lined baking tray.
Smear some butter onto the outside of a glass and roll the glass over the top to smooth out the mixture.
Cut into bars and try not to eat them all at once. Enjoy!
