Healthier Rice Crispy Bars

This childhood nostalgia snack is so yummy, but it’s definitely not healthy. So I’ve tweaked the recipe to be a bit healthier for us and to help our bodies not have such a massive blood sugar spike and crash. I think it’s even more delicious than the original, but you give it a try and let me know what you think.

Ingredients:

  • 1/2 cup butter

  • 280g marshmallows

  • 1 tsp vanilla paste

  • 1/4 cup salted creamy almond butter

  • 1/4 cup vanilla collagen powder (I use the Vital Proteins one)

  • 255 g Rice Krispies


Method:

  • Add the butter and marshmallows to a large pot and heat on low. Stir the butter and marshmallows until they melt and are combined and smooth.

  • Switch off the heat, then add the vanilla paste, almond butter, and collagen powder and stir well.

  • Fold in the Rice Krispies until the marshmallow mixture is evenly distributed.

  • Pour the mixture into a lined baking tray.

  • Smear some butter onto the outside of a glass and roll the glass over the top to smooth out the mixture.

  • Cut into bars and try not to eat them all at once. Enjoy!
