Italian Marinated Zucchini

This is one of my favourite ways to make zucchini. It is fresh, delicious, and so easy to make. And the best part is that the longer you leave it, the more flavour it gets. This is the ideal side dish for a summer lunch.

Ingredients:

  • 4 large zucchinis

  • 1/2 cup olive oil

  • 3 garlic cloves, sliced thin

  • 1/4 cup rosé vinegar (or red wine vinegar)

  • 1/4 cup apple cider vinegar

  • 1/4 cup chopped mint and basil

  • Salt and pepper to taste


Method:

  1. Wash and cut your zucchini into about 1-inch half moons.

  2. In a large pan, heat the olive oil over medium-high heat. Fry the zucchini in batches until golden, stirring occasionally, but being gentle so as not to break up the pieces too much.

  3. Once cooked, add to a large bowl along with the remaining olive oil from the pan, the garlic, rosé vinegar, apple cider vinegar, herbs, and salt and pepper to taste.

  4. Mix until everything is well-coated, then allow to marinate for at least 3o minutes, ideally overnight.

  5. Serve cold or warmed up. Enjoy!
