Asparagus, Snap Pea & Quinoa Salad

This is a salad I will be making on repeat this summer. It is crunchy, fresh, and packed with veg. The pistachios give a lovely crunch, and the quinoa soaks up all the dressing so you get a pop of flavour with every bite. This is great for a main or a side dish.

Ingredients:

  • 100g green asparagus

  • 1 tsp butter

  • 340g sugar snap peas

  • 50g feta, crumbled

  • 1 cup cooked quinoa

  • 3 sun-dried tomatoes, chopped

  • 3 tablespoons olive oil

  • 3 tablespoons rosé strawberry vinegar (or red wine vinegar)

  • Salt & pepper to taste

  • 1 handful of pistachios, chopped


Method:

  1. Cut your asparagus into bite-sized pieces. Sauteé the asparagus in a pan with the butter until tender (about 5-10 minutes).

  2. Cut your snap peas at a diagonal to get little slivers. Add to a large salad bowl along with the rest of the ingredients (besides the pistachios). Season to taste, then toss well.

  3. Top with the chopped pistachios and enjoy hot or cold.
