Moist Gluten-Free Chocolate Chip Banana Bread
Who doesn’t love a freshly baked banana bread? I will find any excuse to make banana bread and often purposefully leave my bananas to go black so that I have a valid excuse to bake some. This is the first gluten-free version that has actually come out moist and doesn’t sink after taking it out of the oven.
Healthier Rice Crispy Bars
This childhood nostalgia snack is so yummy, but it’s definitely not healthy. So I’ve tweaked the recipe to be a bit healthier for us and to help our bodies not have such a massive blood sugar spike and crash. I think it’s even more delicious than the original, but you give it a try and let me know what you think.
Blackberry, Raspberry & Thyme Jam
Seeing all of the fresh berries in season got me so excited to make a fresh berry jam. I like my jam more spreadable and with less sugar than most, because the berries are already so sweet and flavourful. This is so easy to make and is great to spread on toast, add on top of a scone, or spoon in between cake layers.
Raspberry Chewy Mochi Donuts
Crispy and golden on the outside, and chewy on the inside. If you have never tried mochi donuts before, you are in for a treat. They are made with rice flour, which gives them their chewy texture, and this also means that they are gluten-free. You can dip them in whatever flavour glaze you like, but I chose a raspberry glaze for these.
Mexican Hot Chocolate Brownies
What’s better than fudgy chocolate brownies? A Mexican hot chocolate spiced version. These are chewy, rich, and beautifully spiced with cinnamon. They are studded with chocolate chips, have a delicate crust on the outside, and have crispy edges.
Mixed Berry Crisp
Whenever I see a special on berries, you know I’m buying them and likely getting way more than you can easily eat before they go funky. I end up making a berry crisp often to use up the berries that are past their prime firmness, but still perfectly tasty.
This is such an easy way to use up berries, and it can be made with frozen berries too. It comes out so bright, sweet, and chewy- a perfect dessert for spring or summer!
Gluten-Free Hot Cross Buns
Having hot cross buns during Easter time is a must for me. These are a gluten-free version and they came out so scrumptious! They are slightly crusty on the outside but soft on the inside. Studded with saltanas and giving off the most beautiful cinnamon aroma, these take me back to Easter time as a kid.
German Black Forest Cake
This is a moist chocolate cake, drenched in cherry syrup, filled with a rich dark chocolate ganache, piped with sweet cream, and finally topped with cherries. It is a winner as a birthday cake or as a delicious summer treat.
Lemon Posset
These are zesty, refreshing, and a really cute way to serve a dessert using the whole fruit. If you love lemons, this is a must-try, and it’s a great way to use up lots of lemons!
Almond Vanilla Croissants
Buttery, flaky croissants filled with a gooey almond vanilla center. These are so simple to make and are a great way to use stale croissants. Once they bake, they will be even more delicious than when they were fresh, plain croissants.
Olive Oil Cake Topped With Mascarpone and Berries
There’s something about baking with olive oil. It leaves the cake with a rich, moist crumb and a touch of bitterness. This olive oil taste goes so perfectly with the sweet berries and mascarpone cream. If you have never tried an olive oil cake before, I would highly suggest trying this one.
Blueberry Cheesecake Brioche Buns
These golden, pillowy soft brioche buns are filled with cheesecake centers and topped with blueberries. I served these at my birthday party a year ago, and people still ask me for the recipe. It’s the perfect summer bake for a brunch or coffee date.
Dutch Apple Pie
After living in the Netherlands for 7 years and trying multiple ‘best-rated’ apple pie spots, I am confident to say that this comes up pretty high on the apple pie winner list. The crust is flakey, the apples are perfectly sweet, and you get a spiced caramel-like center between the fruit. Perfection!
Roasted Strawberry Cheesecake
I made this for my birthday, and it was an absolute hit! The sweet burst of strawberries paired with the creamy ricotta cheesecake, it is perfect for a summer dessert.
Chocolate Chip Cookies
Crunchy on the edges, chewy in the middle, this cookie is the ultimate treat. Make sure to use good-quality chocolate instead of baking chocolate (it makes a huge difference!).
Almond Butter Stuffed Dates
Such a simple thing to make but is a delicious, healthy snack or dessert when you’re looking for something that tastes like nutty caramel.
Matcha & White Chocolate Blondies
These are perfectly gooey and studded with white chocolate chunks. The matcha is earthy and a great dessert for your next baking day.
Apple & Pear Crumble
The cosiest dessert for a cold winter’s day. One of those classics that feels like a hug on a plate.
Spiced Carrot Cake
This carrot cake is spicy and studded with pecans and pairs perfectly with the cream cheese frosting, which is not too sweet. Perfect as a birthday cake or for any special occasion.
