Who doesn’t love a freshly baked banana bread? I will find any excuse to make banana bread and often purposefully leave my bananas to go black so that I have a valid excuse to bake some. This is the first gluten-free version that has actually come out moist and doesn’t sink after taking it out of the oven.

So I’ve tweaked the recipe to be a bit healthier for us and to help our bodies not have such a massive blood sugar spike and crash. Crispy and golden on the outside, and chewy on the inside. If you have never tried mochi donuts before, you are in for a treat. They are made with rice flour, which gives them their chewy texture, and this also means that they are gluten-free. You can dip them in whatever flavour glaze you like, but I chose a raspberry glaze for these.
