Tomato, Ham & Feta Crustless Quiche
This is something you can throw together for a perfect breakfast or brunch option on the weekends. It’s simple (but delicious) and packed with veg.
Ingredients:
8 eggs
1/4 cup cream
1/2 tsp each dried garlic, chives
1 tsp pink Himalayan salt
1/4 tsp pepper
200g feta
100g cherry tomatoes
100g diced ham
Method:
Preheat oven to 180 degrees Celsius.
In a large bowl, add the eggs, chives, salt & pepper, and pour in the cream, then whisk until combined.
Slice the cherry tomatoes in half and add the tomatoes and ham to the bowl.
Crumble in the feta, but reserve a handful of feta to crumble on top. Stir well.
Grease an 8x10” pan and pour the egg mixture into the pan, then sprinkle the remaining feta on top.
Bake for 18-20 minutes
Serve with buttered, crusty bread and a side salad. Enjoy!
