Easy Beef Mexican Burritos

Packed with protein and veggies, it is a speedy, nutritious meal to whip up if you want a wholesome meal in just a few minutes.


Ingredients

  • 500g beef mince

  • 1 onion

  • 3 garlic cloves

  • 2 tsp each ground coriander, paprika, and cumin

  • 1 tsp salt

  • 1/2 tsp pepper

  • 400g can black beans

  • 340g can corn

  • 2 red peppers, cut into cubes

  • 1 handful rosa tomatoes, cut into quarters

  • optional toppings: avocado, cheese, sour cream, lettuce


Method:

  1. Dice your onion and garlic, and fry in some oil on medium heat until golden.

  2. Add your beef mince to the pan and immediately also add the ground coriander, paprika, cumin, salt, and pepper so that they can cook into the meat. Fry until the meat is browned.

  3. Add in the beans, corn, and peppers, and allow to cook for 5 minutes.

  4. In the meantime, heat up your tortilla wraps either in a pan or in the microwave.

  5. Now it is time to assemble! Spread a generous amount of sour cream on the tortilla (if using), then top with the mince, tomatoes, avocado, cheese, lettuce etc.

  6. Wrap ‘em up and enjoy!
