Red Wine Braised Beef Short Ribs
If you want to impress your guests or want the perfect date night recipe, this is the one. It’s incredibly simple to make, but the flavour is insane!
Ingredients:
2 kg beef short rib
some flour for dusting
3 tbs olive oil
1 onion
1 head of garlic
3 stalks celery
1 cup of roughly chopped carrots
1 tbs tomato paste
1 tsp pepper
1 tbs flaky sea salt
750ml red wine
2 beef stock cubes (dissolved in 2 cups of hot water)
1 bay leaf
1 tsp each dried thyme, rosemary
Your choice of mash, rice, or polenta as the base
Method:
Preheat the oven to 180 degrees Celsius.
In a large Dutch oven, add some olive oil and set to medium-high heat.
Dip each beef short rib into a bowl of flour, then fry on each side in the Dutch oven until golden brown (about 2 minutes on each side). Do a couple of ribs at a time to avoid overcrowding the pot and ensure they do not burn.
Remove the ribs from the pot and set aside.
Dice the onion, garlic, and celery, and cut the carrots into large chunks. Add them all to the pot with a splash more olive oil and fry for 5 minutes.
Add the ribs back to the pot, along with the remaining ingredients, and bring to a simmer.
Cover the pot with the lid and put it in the oven. Allow to cook in the oven for 4-6 hours (the longer the better).
Once it has cooked, carefully remove from the oven and serve the ribs on your choice of mash, rice, or polenta and drizzle with the jus from the pot. Enjoy!
