Shakshuka

This is beyond delicious and is perfect for brunch. Packed with peppers and tomatoes, it’s nutritious and easy to prepare. Pair it with some flatbread for the ultimate meal.


Ingredients:

Serves 2

  • 2 tbs salted butter

  • 1 large onion

  • 3 cloves of garlic

  • 2 large red peppers

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp smoked paprika

  • 1/4 tsp chili flakes

  • 1 tsp salt

  • 1/2 tsp pepper

  • 200g cherry tomatoes (or any tomatoes you have on hand)

  • 4 eggs

  • Parsley for garnishing


Method:

  1. Dice the onion and garlic. De-seed the red peppers and cut into chunks.

  2. In a large pan, melt the butter, then add the onion, garlic, and red peppers and cook for 5 minutes until softened.

  3. Add the cumin, coriander, paprika, chili flakes, salt, and pepper and cook for 1 minute until fragrant.

  4. Cut the cherry tomatoes in half and add them to the pan, and cook for 5 minutes until soft and jammy.

  5. Add about 2 tablespoons of water to the pan and mix well.

  6. Make 4 wells in the pan with a spoon, then crack the eggs into these holes. Cover with a lid and allow the eggs to cook to your liking (about 5-7 minutes for soft yolks).

  7. Season eggs with salt and pepper, then garnish with parsley. Serve with flatbreads and enjoy!
