Chocolate Chip Cookies

Crunchy on the edges, chewy in the middle, this cookie is the ultimate treat. Make sure to use good-quality chocolate instead of baking chocolate (it makes a huge difference!).


Ingredients:

  • 1 cup salted butter

  • 1/2 cup sugar

  • 1/2 cup dark brown sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 tsp salt

  • 2 cups flour

  • 1 tsp baking soda

  • 200g good-quality milk chocolate chunks


Method:

  1. Preheat the oven to 180 degrees Celsius and line a baking tray with some baking paper.

  2. In a large bowl, add the butter and sugar and beat for 3 minutes until pale and fluffy.

  3. Add the eggs one at a time, beating for another 3 minutes until creamy.

  4. Add the vanilla and salt and beat again.

  5. Sift in the flour and baking soda and mix until smooth.

  6. Add in the chocolate chunks and stir until evenly distributed.

  7. Place heaped tablespoonfuls on the lined baking tray, ensuring there is enough space between them, as they will spread when baking.

  8. Bake for 9-11 minutes. Allow to cool for a few minutes before lifting. Enjoy!
