Pickled Carrots
Throw this together for a refreshing and delicious side salad or garnish. It is way easier than you think and comes together in just a few minutes. It’s a great way to use up carrots and will last in the fridge for 3-4 weeks (if you manage to not gobble them up before then!).
Ingredients:
6 carrots
1 tsp sugar
1/2 tsp salt
1/4 cup vinegar
1 cup water
Method:
Peel the carrots, then cut them into matchsticks. If you have a julienne peeler (or any other tool to achieve this cut), then it will save you a ton of time over cutting them with a knife.
In a jar, add the sugar, salt, vinegar, and water, along with the cut carrot sticks.
Close the lid tightly and shake the jar to dissolve the sugar and salt.
Leave to pickle in the fridge for at least an hour (the longer, the more flavour there will be).
Serve as a side salad or a delicious garnish. Enjoy!
