Asian Cucumber Pepper Salad
This comes together in minutes and makes such a delicious summer side salad. The miso ginger sauce makes the perfect dressing and soaks into the veg when left to marinade. It’s crunchy, salty, and refreshing.
Ingredients:
1 large English cucumber
350g sweet mini peppers
1 tsp fresh ginger (diced)
1/4 cup olive oil
1/2 tsp salt
1/4 tsp pepper
1/2 tsp gochujang paste
1 tsp koji bijin miso paste
1 tsp soy sauce
1 tbsp white vinegar
Method:
Wash and chop the cucumber into little blocks. Wash, deseed, and slice the peppers into rings.
In a bowl, add the ginger, olive oil, salt, pepper, gochujang paste, miso paste, soy sauce, and white vinegar. Mix well until combined.
Add the cucumber and peppers to the bowl with the sauce and toss until coated.
You can serve it immediately or leave it to marinate for an hour for the best flavour. Enjoy!
