Zucchini Feta Crustless Quiche
A great brunch dish for your next get-together. The saltiness of the feta pairs so well with the creaminess of the eggs, and it is simple to put together. It is always a crowd-pleaser.
Ingredients:
1 onion
3 garlic cloves
8 eggs
1/4 cup cream
1/2 tsp salt
1/2 tsp pepper
1/2 tsp dried oregano
1/2 tsp dried basil
1 large zucchini, grated
100g cheddar, grated
100g feta
Method:
Preheat the oven to 180 degrees Celsius and grease a 9” round baking tin.
Chop the onion and dice the garlic, then fry in a pan on medium heat until soft.
In a large bowl, whisk the eggs, cream, salt, pepper, oregano, and basil until well combined.
Stir in the grated zucchini and cheddar, then crumble in the feta.
Pour the egg mixture into the greased baking tin and bake for 40 minutes or until set and golden on the edges.
Allow to cool for 10 minutes before cutting into slices. Enjoy!
