Easy Seeded Bread
If you’ve ever been intimidated by baking bread, this recipe is for you. It is packed with healthy seeds, is so easy to make, and comes out delicious every time. The outside is crunchy, and the inside is pillowy soft.
Ingredients:
450g all-purpose flour (preferably unbleached)
150g seed mixture of choice (I used sesame, poppy, pumpkin, sunflower, and flax seeds)
13g kosher salt
3g dry yeast
310g lukewarm water
Method:
In a medium-sized shallow bowl, combine all of the seeds that you’re using and mix well.
In a large bowl, add the flour, 100g of the seed mixture (save 50g for covering the outside later), salt, and dry yeast, and stir to combine.
Pour in the water, and use a wooden spoon to mix until it forms a dough. Use wet hands to scrape the sides and form a ball of dough.
Cover the bowl with a wet dishcloth or plastic wrap and leave to rise in a warm spot for 12 hours or overnight.
Once the dough has risen, tip it out onto a lightly floured surface and form it into a ball by pulling all 4 corners into the center. Allow the dough to rest for 5 minutes and then pull all 4 corners to the center again to form a tight ball.
Wet your hand and rub it over the dough to make it sticky, then dip the dough into the seeds on all sides.
Set the dough on a piece of baking paper and place it back into the bowl, then cover the bowl with plastic wrap, and allow the dough to proof again in a warm spot for 1.5 hours.
In the meantime, place a Dutch oven (lid on) on the middle rack of the oven and heat the oven to 220 degrees Celsius.
Once the dough has proofed, use a knife to cut a line along the top to allow the steam to escape while cooking.
Take the hot Dutch oven out of the preheated oven and carefully place the dough inside using the baking paper to lower it into the Dutch oven.
Cover with the lid and bake the bread for 25 minutes. Then remove the lid and bake for another 25 minutes until the crust is golden.
Remove from the oven and allow to cool completely on a wire rack before cutting. Cut into slices, slather it with butter, and enjoy!
