Tzatziki Chicken Wraps

Wraps are a great way to pack lots of veg and protein into your meal. Tzatziki chicken is one of my favourite things to put in wraps because it just tastes so damn good and it’s actually really simple to make!


Ingredients:

For the chicken:

  • 1 kg chicken breast

  • 1 cup Greek yogurt

  • 1 tsp salt

  • 1/2 tsp each dried dill, parsley, onion powder, paprika

  • 2 tsp garlic powder

  • juice from 1/2 lemon

For the tzatziki:

  • 1/2 cup Greek yogurt

  • 1/2 large English cucumber, grated

  • 1/2 tsp garlic powder

  • 1 tsp salt

  • 1/4 tsp dried dill, parsley

  • 1 sprig of mint, chopped finely

  • 2 tbs extra virgin olive oil

For the salad:

  • 2 peppers (red and orange)

  • 2 corns on the cob

  • 150g lamb’s lettuce

  • 2 large tomatoes

  • 1/2 large English cucumber

  • 1 avocado

  • 1/2 tsp salt

  • 1 tbs extra virgin olive oil

  • juice from 1/2 lemon


Method:

  1. Cut the chicken into cubes and place the chicken along with all of the remaining ingredients for the chicken into a large bowl to marinade. Set aside while you prep the tzatziki and salad.

  2. In a small bowl, add all of the ingredients for the tzatziki and mix until well combined.

  3. Grill the corn and red peppers (either on a proper grill or in the airfryer) until slightly charred and full of flavour. De-seed the red peppers and cut them into cubes. Cut the corn from the cob and add these to a large salad bowl.

  4. Cut the tomatoes, cucumber, and avocado into large chunks. Add these and the remaining salad ingredients to the salad bowl and toss well.

  5. Finally, grill the chicken until cooked through (about 15 minutes) and golden.

  6. Heat up your wraps either in a pan or in the microwave.

  7. To assemble, add a generous portion of salad onto your wrap, then top with chicken and tzatziki. Wrap it up and enjoy!
