Peanut Butter Cinnamon Granola
If you want a great start to your day with a breakfast full of fibre and healthy fats, this is a good option. Naturally sweetened and full of goodness!
Ingredients:
3/4 cup unsweetened peanut butter
2 tbs coconut oil
1/4 cup coconut sugar
2 tbs maple syrup
2.5 cups oats
2 tbs hemp hearts
1 pinch salt
1/2 cup buckwheat groats
1/3 cup pumpkin seeds
2 tbs flax seeds
2 tsp cinnamon
1 tsp maca powder
1 cup of nuts (I used walnuts, but it can be any that you choose)
3 medjool dates
Method:
Preheat the oven to 180 degrees Celsius.
In a large pot, add the coconut oil, peanut butter, coconut sugar, and maple syrup. Set to low heat and stir constantly until the oil has melted and there are no lumps. Switch off the heat.
Add the remaining ingredients to the pot and stir until well combined.
Line a large baking sheet with baking paper and pour the granola mixture onto the tray
Spread the mixture evenly and make sure that the edges and corners are compact so that they don’t burn.
Bake at 180 degrees Celsius for 15 mins
Remove from the oven and allow to cool fully before breaking it apart to ensure you get nice, chunky granola pieces. Store in an airtight container and enjoy with yogurt.
