Pea, Beet & Rocket Salad
A fresh and crunchy salad to pair with your dinner for a pop of colour on your plate. The sweetness of the beets contrasts perfectly with the acidity of the balsamic vinegar.
Ingredients:
500g cooked beets, cubed
250g cooked peas
200g cherry tomatoes, halved
100g rocket
1/2 English cucumber, cubed
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
Method:
In a large salad bowl, add the beets, peas, cherry tomatoes, rocket, and cucumber.
Drizzle the olive oil and balsamic vinegar over the salad.
Season to taste with salt and pepper and toss to coat evenly. Enjoy!
