Matcha & White Chocolate Blondies

These are perfectly gooey and studded with white chocolate chunks. The matcha is earthy and a great dessert for your next baking day.


Ingredients:

  • 3/4 cup butter

  • 1 cup sugar

  • 2 eggs

  • 1 tsp vanilla essence

  • 1 1/2 cup flour

  • 1/2 tsp baking powder

  • 4 tbs matcha powder

  • 100g white chocolate chunks


Method:

  1. Preheat the oven to 180 degrees Celsius and grease a 9x9”tin.

  2. In a large bowl, whisk the butter and sugar until combined.

  3. Add the eggs and vanilla and whisk again until light and fluffy.

  4. Sift in the flour, baking powder, and matcha powder, then fold the mixture until there are no lumps.

  5. Add in the white chocolate chunks and mix them in.

  6. Pour the mixture into the greased tin and bake for 30 minutes.

  7. The center will still be slightly gooey so wait until it has mostly cooled before cutting. Enjoy!
