Granadilla Mango Parfait

An incredibly simple breakfast, yet a delicious showstopper for your brunch guests. Top this with homemade granola for the perfect crunch.


Ingredients

For 4 servings:

  • 1 cup mango (fresh or frozen)

  • 1/2 cup granadilla pulp (fresh or frozen)

  • 2 cups Greek yogurt

  • 2 scoops vanilla protein powder

  • 1 cup granola of choice


Method:

  1. In a small pot, add the mango and granadilla pulp with a splash of water and set on low heat. Allow the fruit to thaw (if frozen) until soft and you can mash it with a fork.

  2. Put a sieve over a bowl and press the fruit pulp through the sieve to get a smooth consistency and remove the granadilla pips. You could also put it through a blender first to make it easier.

  3. Set in the fridge to cool.

  4. In a medium-sized bowl, add the yogurt and protein and mix until well combined.

  5. Divide the yogurt into 4 glasses and spoon the mango pulp on top of each. Add a generous amount of granola to each, then serve immediately. Enjoy!
