Creamy Vanilla Chia bowl

This is the best version of chia seed pudding that I’ve ever had. It is so creamy and delicious. Top it with your favourite fruit and nuts, and you have the perfect breakfast.


Ingredients

  • 1 cup Greek yogurt

  • 1 cup milk (any that you prefer. I like using coconut milk)

  • 1 scoop vanilla protein powder

  • 1 tbs maple syrup

  • 1 tsp vanilla essence

  • pinch Himalayan pink salt

  • 1/4 cup chia seeds


Method

  1. In a medium-sized bowl, add the yogurt and slowly add the milk while whisking until you get a smooth paste.

  2. Stir in the vanilla protein powder, maple syrup, vanilla essence, and salt.

  3. Finally, add in the chia seeds and mix, ensuring that there are no clumps.

  4. Cover with cling film and put in the fridge for at least 1 hour, but ideally overnight.

  5. Once the seeds are plump and squishy, stir the chia seed pudding and add more milk if you like it more runny.

  6. Dish up into a bowl with some berries, nut butter or any other toppings that you like. Enjoy!
