Basil and Almond Pesto

Pesto is quite literally the greatest thing to exist. If I could, I would smother everything that I eat with this stuff. If you only know pesto from a store-bought jar, let me change your life real quick and urge you to make this. This is a great way to use up a bunch of basil, and you can spread it on just about anything!

Ingredients:

  • 115g fresh basil

  • 1/2 cup roasted almonds

  • 1 clove garlic

  • 1/2 cup grated pecorino or Parmesan

  • 1/2 cup olive oil (plus more for drizzling)

  • 1/2 tsp salt

  • 1/4 tsp pepper


Method:

  1. Add all of the ingredients to a blender, then blend for about a minute. Everything should be consistently blended but still a bit chunky (not a completely smooth paste).

  2. You can also add more olive oil to loosen it a bit. I like to finish it off with a final drizzle of olive oil to make it glossy and taste-test it to see if it needs more salt or pepper.

  3. Slather it onto a sandwich, add it as a topping to chicken, or drizzle over veggies. Enjoy!
