Meatballs with Lemon Garlic Yogurt Sauce

Packed with flavour and a great option for a weeknight dinner. This goes perfectly with my pea, beet & rocket salad, which you can find the recipe for here. The lemon garlic yogurt sauce is so creamy and ties the whole dish together.


Ingredients:

For the meatballs:

  • 500g ground beef or pork

  • 3 cloves garlic

  • 1 large onion

  • 1/2 tsp each of dried parsley, basil, oregano, and thyme

  • 1/2 tsp paprika

  • 1 tsp salt

  • 1/4 tsp black pepper

  • 2 large eggs

  • 1/2 cup breadcrumbs

For the sauce:

  • 1 cup plain Greek yogurt

  • zest from 1 lemon

  • juice from 1 lemon

  • 2 cloves garlic (crushed)

  • 1/2 tsp salt

  • pinch of black pepper

  • 1/2 tsp mustard

Method:

  1. Dice up the onion and garlic.

  2. In a large pan, drizzle some olive oil and bring to a medium-high heat. Cook the onions and garlic until golden.

  3. In a large bowl, combine all of the meatball ingredients as well as the cooked onion and garlic. Use your hands to mix everything really well.

  4. Wet your hands to help with sticking, and roll about a tablespoon size of meat into a ball.

  5. Fry the meatballs on medium heat in an oiled pan and turn to ensure each side gets browned (cook for about 20 minutes to cook the meat through).

  6. In the meantime, make the sauce by combining all of the sauce ingredients in a small bowl and mixing well.

  7. To assemble, fill half a bowl with salad, and on the other side, add a generous amount of yogurt sauce, then top with some meatballs. Enjoy!
