Guacamole
There’s nothing better than cutting open the perfect avocado. I get so excited when my avos are perfectly ripe and the flesh is buttery. Besides using my perfect avo for an avocado toast, my other favourite thing to do is make fresh guac. It’s so flavourful and makes the best snack with some nachos.
Ingredients:
2 ripe avocados
1 handful of cherry tomatoes
½ tsp salt
¼ tsp pepper
small bunch of fresh cilantro (cut finely)
juice from ½ a lime
½ jalapeño (deseeded and minced)
½ red onion (minced)
Method:
Scoop the flesh of the avocados into a small bowl and use a fork to mash them to whatever smoothness you like.
Cut the cherry tomatoes into small pieces.
Add the tomatoes, salt, pepper, cilantro, lime juice, jalapeño, and red onion and mix well.
Serve with corn nachos or as a side with your favourite tacos. Enjoy!
