Chocolate Coconut Pecan Granola
You’ll never want to buy store-bought granola again after seeing how simple and easy it is to make this delicious chocolate coconut pecan granola.
Ingredients:
1/3 cup nut butter (any that you like- almond, cashew, macadamia etc.)
1 tbs honey
2 tbs solid coconut oil
2 cups oats
1 cup chopped pecans
1 cup coconut flakes
1/3 cup buckwheat groats
1/3 cup flax seeds
1/3 cup pumpkin seeds
1 tbs hemp hearts
Method:
Preheat the oven to 160 degrees Celsius.
In a pot, add the nut butter, coconut oil, and honey, and allow to melt on low heat while stirring constantly to combine into a smooth paste. Be careful not to burn the mixture, and to remove it from the heat before it starts to boil.
Once the nut butter mixture is evenly melted and smooth, and it has been removed from the heat, add all of the remaining ingredients to the pot and stir well to evenly coat the nuts and grains.
Line a baking sheet with baking paper, then pour the granola mixture onto it. Be sure to press the mixture down with a spoon so the surface is even and the higher sections won’t burn.
Bake for 15 minutes, then allow to cool completely before transferring to an airtight container. Enjoy!
